Lavender oatmeal cookies

Yes, you heard that right.

See, I have a slight obsession with all things lavender. When I discovered that you could put it into cookie form, I nearly died of excitement.

I first saw this magnificent combination at the farmers market last year. There was a whole mini-tent dedicated to all things lavender, including lavender infused salt and pepper, and even lavender sugar. So I snatched up all three.


They also had soaps and sachets and everything else you could possibly do with lavender, including shortbread cookies. Major nom-age.

Anyway, up until now, I hadn't used the sugar. (Conversely, I use the salt and pepper on everything.) Then I read  Kristen's post (from And now, lights) about lavender shortbread cookies and started drooling.

Then, a few hours later, I saw an orgasmic recipe for a cocktail that tastes like an oatmeal raisin cookie in my Rachael Ray magazine.

All of this led me to realize that I wanted oatmeal cookies. Without raisins. But with lavender.


Bring it.


After perusing online for a bit, I found this recipe.. then realized that I'd rather not have almost 9 grams of fat in one cookie. So I perused a bit more and ended up using the following recipe instead, but used my lavender sugar instead of regular white sugar.

Result?

Fan-freaking-tastic. And only 2 grams of fat per cookie! Mucho better than 9, yes?


Low Fat Oatmeal Cookies (...with lavender!)

1 cup all purpose flour

1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon (optional)
2 tbsp butter, room temperature
1/4 c plain apple sauce
1 large egg
1 tsp vanilla extract
1/2 cup white lavender sugar
1/2 cup brown sugar
2 cups quick cooking oats
1/2 cup chocolate chips

Preheat oven to 375F. Line a baking sheet with parchment paper.

In a medium bowl, whisk together flour, baking powder, baking soda and salt. Add cinnamon if using raisins, instead of chocolate chips.

In a large bowl, cream together the butter and the sugars. Beat in the egg, followed by the applesauce and the vanilla extract. Working by hand, stir in the flour mixture and the oats until just combined and no streaks of flour remain. Add chocolate chips or raisins just before the batter comes together.

Drop tablespoonfuls onto the prepared baking sheet. Bake for about 9-12 min at 375F. Cookies will be light brown at the edges, but will not get as dark and golden as regular cookies.

Let cool on sheet for 3 or 4 minutes, then transfer to a wire rack to cool completely.
Store in an airtight container.

Makes 2 dozen cookies.

I totally agree with you, the 9 grams of fat for ONE cookie is not worth it, your lighter recipe sounds just as yummy. :D

I love lavender! I've never had lavender cookies but my uncle used to get me lavender candies that I loved!
